The past few weeks I have decided to make a change and reduce the HFCS my family has been eating. The first step in this process, I have decided to make my own bread using my little bread machine.
I am the type of person who follows a recipe to get a basic idea… but do a lot of tinkering around with the ingredients. Rarely do any two of my meals/recipes ever taste the same – I am always messing with the ingredients and recipe!
Below are three of my basic recipes (with some tinkering of my own):

Whole Wheat Bread
Ingredients
- 1 1/2 c & 2 Tbsp water
- 2 Tbsp oil
- 2 tsp salt
- 1/3 c. brown sugar
- 4 1/4 c. flour (4 cups whole wheat flour + 1/4 c. wheat germ)
- 2 Tbsp flax seed
- 3 Tbsp milk
- 2 tsp yeast
Instructions
- Add ingredients into your bread machine in the order listed.
- Place yeast in a small hole (poked with finger/spoon) in the center of the mound of ingredients.
- Begin bread machine cycle according to your model machine. (Mine is whole wheat/dark crust)

Whole Wheat Pizza Crust
Ingredients
- 1 1/3 c. water
- 2 tbsp olive oil
- 3/4 tsp salt
- 2 c. all purpose flour
- 2 c. whole wheat flour
- (I added a few tbsp of honey for flavor)
- 2 tsp yeast
- (You can use ALL whole wheat flour - but splitting the flour helps the flavor/texture)
Instructions
- Add ingredients in the order given into the bread machine pan.
- Start dough cycle. (On my machine this takes 2 hours).
- Once the dough is done remove it from the pan onto a floured work surface.
- Roll dough to fit the shape of your pan.
- Brush lightly with olive oil and add toppings.
- (You can hold this dough, with just the olive oil, for a couple of hours in the fridge covered in plastic wrap.)
- This recipe makes two 14 inch round pizzas.
- Bake in a preheated 450 degree oven for 10-12 minutes.

Wheat Sandwich Bread
Ingredients
- 2 Tbsp warm water
- 1 c. milk
- 3 Tbsp butter
- 2 1/2 Tbsp sugar
- 2 tsp salt
- 3 1/4 c. flour (I used 2 c. whole wheat, 1 c. white, 1/4 c. flax seed)
- 2 1/4 tsp. yeast
Instructions
- Add ingredients in order listed into your bread machine
- Follow your bread machine methods for making the bread.
- I use the whole wheat cycle with medium colored crust.

Just made your Whole Wheat Bread recipe in my breadmaker last night and it turned out great! I’ll remember for next time that my breadmaker’s wheat bread cycle is incredibly long (4 hours & 30 minutes!), and I’ll select the “light” crust option ’cause under medium it’s really well done on the sides… Can’t wait to try your Wheat Sandwich Bread recipe next! I really want to try each of these recipes but have a small bread machine and cannot use more than 2 cups of flour. Do you think I can use half of all the ingredients? Or what would you recommend?

When you say flax seeds are they ground or whole?

I grind mine in a coffee grinder… but you can do a mix if you prefer. 🙂
