I have been trying to make healthier choices with my nutrition, for me and my family. Last week I was sent a box full of delicious temptations filled with Udi’s Gluten Free sweets and treats. I decided to make the best of the delicious situation and the heat… to make a sweet ice-cream treat for the boys when they came home from school yesterday.
To make the Udi’s Gluten Free Ice-Cream Cookie Sandwich, you simply need cookies and ice-cream. It is pretty simple to make and relatively not-messy (until the ice-cream starts to melt).
You need:
Udi’s Gluten Free Cookies (your favorite flavor of choice – I used Soft-baked Maple Pecan cookies)
Small (single serving size) ice-cream container (flavor of your choice, I love Stonyfield Organic Minty Chocolate Chip)
How to make your Delicious Ice-Cream Cookie Sandwich:
Find a sharp knife to cut into your ice-cream container. It is easiest and less messy when the ice cream is frozen solid (it gets messy and hard to cut when it begins to melt… so cut fast!) I cut my ice-cream slices about a half an inch to a full inch in width.
Place cut ice-cream slices between two cookies. Leave the carton sleeve on to hold the ice-cream in place (to be removed before eating).
Either place the ice-cream cookie sandwiches in the freezer to enjoy later (be cautious that the cookie freezes too so it will be very hard and crunchy – my husband enjoyed his treat after dinner and it wasn’t as yummy as when made fresh) or put on a platter to hand to your eager children ready for a sweet after school special treat.
My boys were so excited. I rarely give them sweets, so at this point they were telling me that I have “such a cool job that I can make cookie treats and give them to us!” Ha! I think they are impressed.
What they weren’t happy with is how long it took me to give them their treat, as the ice-cream cookie sandwiches were melting in the heat of the afternoon. Mama’s got to take photos for the blog, boys!
The boys approve. They were asking when I would make them this treat again. It was super simple. Super yummy. A big hit!
Even as the ice-cream melted all over their little hands and made them sticky, they were not complaining. You can choose any Udi’s Gluten Free cookie flavor of your choice. Yum. I love mint chocolate chip. I don’t usually keep ice cream in my house bec I will eat all of it before it gets to the kids. But something like this might help it go faster…. 😉
