Week nights for our family are always busy and on the go. I am a huge fan of making dinner simple, healthy, and easy! Emphasis on the easy. To make dinner meal planning easy, I love theme nights. Monday nights in our house is meatless Monday.
Not only can plant-based diets be good for people and better for the planet, but they taste amazing too! I have decided to take the #MeatlessMondayNight challenge for our family. Adopting a more plant-based diet can start with making a change, just one day a week.
Last night, a typical Monday night in our family, we had sports practices all evening. When preparing and planning my family’s dinner, I wanted something that would be quick, easy, healthy, and tasty!
I prepared a simple pasta and veggies bowl for dinner.
Once the boys were in bed for the night, I prepared a favorite sweet treat for my husband and I.
Chocolate Peanut butter Banana Protein Shake
Ingredients:
1 c. Silk Almond Milk
2 Tbsp Powdered Peanut Butter
1 Banana
1 scoop of your favorite Vegan Chocolate Protein Powder
Ice (when you add more ice you get a thicker shake)
* Simply add your ingredients in your blender (I love my Vitamix blender). Blend until you have reached your desired consistency. *

I’ve been cooking a lot of meatless meals lately. My daughter decided about 2 months ago that she wanted to be a vegan. I figured the best way to ensure she gets the right amount of protein is to cook that way for the entire family, at least a handful of meals a week. It’s been a fun and rewarding adventure!

We definitely enjoy meatless meals, but I can never remember if it’s Monday, Tuesday or Friday – I’m a little haphazard with my cooking schedule 🙂 This smoothie looks great though – it’s close to one of my favorites!
